My name is Adam R. Garcia. I am a professional chef, father of five, loving husband, blogger, Bi-Polar, and a Type II diabetic. Needless to say, I have a lot on my plate right now.
I was first diagnosed with diabetes in 1986 as a pre-diabetic. When I was first diagnosed, I did not pay attention to what I was eating. Much less, how much I was eating. So my sugars were way out of control. Like anywhere from 300 - 500 mg/dl. I felt helpless, alone, and frustrated about the whole situation. In 1995, I was diagnosed as a Type 2 diabetic. It then occurred to me that the only one who can get a handle on things — was ME!
I started learning about this chronic disease and trying to control my sugars. I noticed something early on while doing my research. It was very technical when diabetes was talked about, whether it was by doctors, nurses, or other experts. It was very difficult to understand why this disease was so complicated to others. So I made a promise to myself — “If I ever had the means to give my disease a more simplified explanation, thereby making it easier for others to understand and an easier way to eat the foods I liked without jeopardizing my health. I would do it.”
Well it has taken me 23 years to do it, but I think I have figured out a way, which is the reason for this blog. I started a blog called Diabetic Cookbook Blog
. I would blog about the research I found. This is to include everything diabetic — cookbook reviews, information, new technology and research, recipe reviews, tips, advice, products, and other pertinent and practical information.
